Dry Hopping & Whirlpool
Getting hop aroma into the glass — whirlpool technique, dry-hop rates and timing, biotransformation, and how to add hops without oxygen whether you ferment in a bucket or under pressure. Plus timing a hoppy beer for a competition.

Late hopping is where modern hoppy beer is made. The bittering charge in the boil sets the backbone, but almost all of the aroma and flavour people taste comes from two cooler additions: the whirlpool and the dry hop.
Getting these right, and keeping oxygen away from them, is the difference between a flat, muddy hop beer and one that jumps out of the glass. Every variety the club has brewed with has a page under hops with its own alpha and oil figures.
Whirlpool (hop stand)
After the boil, with the heat off and the wort coasting down, hops added in the 75–80 °C window give big flavour and aroma without boiling it off as steam, and without the harsh extraction you get nearer boiling.
- Temperature — add at ~80 °C. Hotter scrubs aroma; much cooler extracts less. Hold 20–40 minutes
- Recirculate or whirlpool during the stand to keep hops in contact and spin trub into a cone
- Late and large — the whirlpool is the efficient place for flavour-driving oils. Varieties added here also leave bound aroma precursors for the yeast to work on later
Dry hopping

Beyond ~8–10 g/L you hit diminishing returns and start risking hop burn and vegetal grassiness. More is not linearly better.
Timing and temperature — short and cool
The research points the same way: short, cool contact beats long, warm steeping.
- Most oil extraction happens in the first 24–72 hours
- Keep it at fermentation temperature or cooler (13–18 °C); warmth and time drive oxidation and dull the aroma
Biotransformation
Add a portion of hops while the yeast is still working — roughly days 1–3 — and the yeast converts hop compounds into aromas the raw hops do not have: releasing tropical thiols (passionfruit, guava, grapefruit) and transforming terpenes (geraniol into citronella and lime notes).
To encourage it:
- Add hops during active fermentation, days 1–3, for maximum yeast contact
- Use a thiol-active yeast — Pomona and similar modern IPA strains release far more than neutral ones
- Pair with high-precursor hops — NZ varieties are particularly rich in bound thiols. Riwaka, Nectaron and Nelson Sauvin are the obvious candidates
- A second dry hop near the end then layers fresh, un-transformed aroma on top
Adding hops without letting oxygen in
Cold beer takes up oxygen greedily, and oxidised hop character — cardboard, dull, muddy, fading fast — is the most common way a good hop bill goes wrong. How you manage it depends entirely on what you ferment in, so here are all three cases.
In a bucket or open fermenter. You cannot purge, so minimise instead. Have the hops weighed and bagged before you open anything. Open once, drop them in, close immediately — one opening, not three. Dry hop during active fermentation where you can, because the yeast is still producing CO₂ and will scrub some of what you let in. Never dry hop a bucket after cold crashing: the beer is cold, still, and has nothing left to protect it.
In a sealed fermenter with a gas post. Open, add, reseal, then purge the headspace with CO₂ — a few short bursts with the airlock or relief cracked. This is a large improvement for very little gear, and it is the upgrade most worth making if you are still using a bucket.
Under pressure. Depressurise, open, add, reseal, re-purge, re-pressurise, and do a closed transfer into a purged keg. This is the best case, and in practice the dry-hop opening is the one point where a pressure setup still lets oxygen in — it is worth being quick about it.
Keg hopping, on any setup, measurably boosts and holds aroma through the life of the keg. If aroma is the goal, do not add every gram up front.
How dry hopping changes bitterness
Dry hopping is not bitterness-neutral. It introduces humulinones, about two-thirds as bitter as boil-derived iso-acids but smoother, plus some alpha acids. The net effect depends on where you started:
- Below ~20 IBU — dry hopping tends to add a little bitterness
- Above ~30 IBU — hop material actually absorbs some iso-acids out of solution, so heavily dry-hopped beers often end up smoother than their IBU number suggests
Aroma also makes beer taste more bitter, so a very aromatic beer reads hoppier than it measures. The practical takeaway: do not chase a high paper IBU on a hazy.
Dry hops restart fermentation
Worth knowing before you plan a schedule. Dry hops carry starch-degrading enzymes that break down dextrins the mash deliberately left behind. The beer attenuates further, and more importantly the renewed yeast growth restarts the diacetyl clock — so a beer that had finished its cycle gets handed a second one.
Two consequences:
- Your packaging clock runs from the dry hop, not from the end of primary
- If you bottle, this is a safety issue. Priming sugar assumes no further fermentation

Timing a hoppy beer for a competition
Hop aroma is the most perishable thing in beer, and a hoppy entry is judged on the day, not on how it tasted the week you kegged it.
- Work backwards from the judging date, not the entry deadline. Those are often weeks apart, and the beer keeps fading in between
- Brew late rather than early. A hazy that was excellent six weeks ago will not place
- Fill entry bottles as late as you can — a bottle filled off a keg has no yeast in it to scavenge oxygen, so nothing improves after filling. See Kegging, Carbonation & Competition Bottles
- Do not skip the diacetyl check to make a deadline. Hop harshness is a defect of degree; butter in the bottle is a defect of kind, and judges call it constantly
