Wild, Sour & Barrel-Aged Beer
Two ways into sour brewing — the kettle sour you can do this weekend on your normal gear, and the club barrel solera that has been running for years. Cultures, the sick phase, oak, and the oxygen management a barrel needs.

Most homebrew is clean: one yeast, done in a fortnight. Wild and sour beer is a different craft, and it splits into two quite different commitments.
The quick road is a kettle sour or a souring yeast — a weekend’s work on your normal gear, finished in the usual couple of weeks. The slow road is a mixed culture and, often, wood: months or years, dedicated equipment, and a lot of patience. Most people should start with the first. The club runs the second, and you can join it without owning a barrel.
Wild and clean brewing do not share equipment. Brettanomyces and souring bacteria permanently colonise plastic, gaskets and tubing. Keep a dedicated set for wild work, and do not lend or borrow it — this is the single fastest way to fault another member’s beer. Start here: the kettle sour
The gentlest way in, and the reason it is gentle is that the bacteria never touch your clean kit.
Sour the wort with Lactobacillus for a day or two before the boil, then boil as normal and ferment with any clean ale yeast. The boil kills the bacteria, so nothing survives into your fermenter. You get bright, clean lactic tartness in the usual timeframe, and your gear is unaffected.
Souring yeasts are the other quick route. WildBrew Philly Sour produces lactic acid itself and is pitched like an ordinary yeast — no pre-boil souring step, no bacteria, no separate equipment. Moderate acidity and a stone-fruit character. If you want a sour on the taps without changing anything about how you brew, this is it.
Neither gives you the depth of a mixed culture. Both give you a sour beer next month rather than next year, and both are good preparation for judging when a longer project is ready.
The barrel club
Valley Brewer runs an informal barrel club — no membership as such, just the members who are keen to take part in barrel projects. The flagship is a 250 L Flanders red solera that lives at Jamie’s place and has been running for several years.
How it works. Ten or eleven brewers each brew a batch of the same Flanders red wort. On fill day everyone turns up with two things: an empty keg, to take away their share of what has been aging for the past year, and a cube of fresh wort, to go back into the barrel. The barrel is drawn down and topped up in one session, then left alone for another twelve months.
That is a solera, and it is why the project gets better rather than just older:
- The culture never restarts. The resident bugs in that barrel have been working continuously for years. A new batch is inoculated by what is already in there, which is far more developed than anything you could pitch.
- Every collection is a blend of vintages. What you take home is not last year’s beer, it is a fraction of every year the barrel has run. That is where the depth comes from, and it is not something a single-batch project can imitate.
- Nobody carries the whole risk. One brewer’s off day is a tenth of the volume, diluted into a large, well-established culture.
What it costs you is one batch of wort a year and a keg to collect into. Matt was first invited for the December 2024 fill, collected and topped up again in December 2025, and Owen joined that round when a few members were unavailable. The next collect-and-top-up is December 2026.
The barrel club is planning further projects, though none are in progress yet. If you want in, the entry requirement is a brew day and some patience, not equipment.
Separately, a couple of members run their own barrels — a ~130 L foeder on Rua bugs, and a 57 L Flanders red in Auckland on a shared house culture, using a recipe derived from the club barrel. Those are independent projects, not part of the solera, but they are where a lot of the club’s practical barrel knowledge has come from.

The cultures
A mixed fermentation is a slow conversation between several organisms:
- Saccharomyces — ordinary brewer’s yeast; does the initial alcoholic fermentation
- Lactobacillus / Pediococcus — bacteria producing lactic acid, the clean tartness. Pediococcus is slower and is responsible for the sick phase below
- Brettanomyces (“Brett”) — a wild yeast working over months, drying the beer out and adding funk: earthy, leather, orchard fruit, barnyard
The result is acidity and complexity you cannot get from clean yeast, but it is unpredictable and slow. Primary alone runs 3–12 months.

Sample with a sanitised thief every month or two and judge by taste, not the calendar. Rushing a sour gives you thin, one-dimensional tartness.
The sick phase — normal, not a disaster
If a Pedio-containing beer develops a blue-cheese or buttery aroma, sometimes with a ropy, slimy texture, at around weeks 6–12 — do not panic and do not dump it.
This is the well-known sick phase: Pediococcus throwing off diacetyl and slime as it sours. Brett then cleans it up over the following weeks to months, replacing the cheese and butter with fruity funk. A fresh or thickening pellicle forming afterwards is a good sign — it means the Brett is taking over.
Worth knowing that this is the one context where butter is expected and you wait it out. In a clean beer it is a fault with a deadline — see Diacetyl.
Oak and barrels
Wood does two jobs: it adds flavour (tannin, vanilla, coconut, spice, depending on toast) and, in a barrel, it allows slow oxygen ingress that shapes a sour over time. You do not need a barrel for the first of those — cubes, spirals or staves in a keg or fermenter give you oak character at batch scale, and are much easier to control.
- Format — cubes and spirals are easier to dose and remove than chips; for long aging, cubes or staves integrate best
- Toast — light to medium for sours (preserves tannin structure); medium to heavy or charred for dark clean beers (vanilla, bourbon)
- American vs French — American is bolder (coconut, vanilla); French is subtler and firmer, and is traditional for Flanders red
- Dose — start low (~1–2 g/L for sours), taste often, and pull the wood before you hit target, because the character keeps blooming after it comes out
- Sanitising oak — boiling water or a K-meta (sulphite) soak. Never StarSan or iodophor — porous wood absorbs them and leaches them back into the beer
Oxygen — the make-or-break variable
In a sour, a little oxygen through the wood is part of the magic; it is why a barrel works and a sealed keg does not. Too much feeds Acetobacter, which makes acetic acid — vinegar — and that cannot be undone.
- Keep barrels as full as possible. Headspace is the enemy, which is a large part of why the solera is topped up in one session rather than drawn down gradually
- Add oak to beer already in a sealed or purged vessel rather than transferring exposed
- Sharp, hot vinegar developing means the oxygen load was too high
- For long aging in anything other than wood, prefer stainless or glass
Brett in hoppy beer
Brett is not only for slow sours. As the primary yeast in a Brett IPA it finishes in 2–3 weeks and throws big pineapple and tropical character. It does tend to mask hop flavour, stays hazy, and turns harsh against high bitterness — keep IBUs lower (≈50–55) than you would for a clean IPA.
If you are starting out
Do a kettle sour or a Philly Sour batch first. It teaches you what acidity does to a beer and costs you a fortnight. Then come to a fill day, taste what a decade of continuous culture actually produces, and decide from there whether you want a barrel of your own.
