Simpsons® Crystal Pale Malt is a light crystal malt kilned to preserve delicate caramel and biscuity flavors while contributing only 20–40 EBC of color. With a fine-dry extract of 78 % and no diastatic power, it requires a fully diastatic base malt for starch conversion. When used at 1–15 % of the grist, it imparts soft sweetness, enhances body, and improves foam stability without significantly altering attenuation. Ideal for lighter styles like pale ales, Kolsch, and wheat beers, it brings subtle complexity and a warm golden hue. Packaged in 25 kg sacks and stable for at least two years under cool, dry storage, Crystal Pale is a versatile adjunct for enhancing flavor, color, and mouthfeel in a wide array of beer styles.
