Southern Cross

Southern Cross is a New Zealand-grown dual-purpose hop, released in 1994 by the country’s breeding program. It is the result of a cross between NZ Smooth Cone and a hybrid of Californian and English Fuggle, combining traditional European character with bright Southern Hemisphere flair.

New Zealand’s hop harvest typically begins in late February and continues through early April, with Southern Cross among the key varieties picked during this season.

Versatile and expressive, Southern Cross performs well across all stages of the brewing process—from bittering to whirlpool to dry hopping. Its signature aroma profile features vibrant citrus and tropical fruit notes, supported by accents of lemon zest, lime, pine, and a gentle spice. With a rich essential oil content and naturally low co-humulone levels, it contributes a clean bitterness and a well-rounded, delicate finish when added late in the boil.

For brewers seeking similar flavor characteristics, Sorachi Ace is often used as a substitute for Southern Cross.
